Late Summer Veggie Recipes (to Make the Most of Your Garden Goodies)

As summer comes to a close, our gardens are all overflowing with zucchinis, squash, and other summer vegetables galore. Not sure what to do with all those summer veggies filling up your pantry? I always go for these late summer veggie staples (and they’re a hit with the entire family come dinner time).

Late summer veggie recipes: zucchini bread, simple fried squash, and more

Being an Appalachian girl at heart, the end of summer was always characterized by whipping up some dinner and dessert dishes with my mom from her garden staples: zucchini and squash. These vegetables are surprisingly versatile, and some of my favorite recipes to make with each include:

  • Zucchini bread: Everyone makes this one a bit differently, but my favorite recipe (“Mom’s Zucchini Bread”) calls for a whole tablespoon of cinnamon, which packs a flavor-filled punch.
  • Fried squash: This staple recipe in my house growing up was esteemed for its simplicity– simply slice up a washed squash, dip the slices in egg wash, roll in flour, and fry on the stove in a pan with hot oil. So easy and you literally can’t mess it up! 
  • Zucchini, squash and onion one-pan sautée: Similar to the recipe above, this one is so super simple you can’t mess it up. In one large pan, simply add slices of zucchini, squash, and some chopped onion. Heat on high and toss in olive oil until the veggies are tenderized, and voila! You have a veggie side dish ready to serve in moments. 
  • Zucchini noodles, or “zoodles”: Requiring a special “zoodle-making” tool (AKA, a spiralizer), this recipe is super simple once you have the required assets (and zoodles are just as diverse as regular noodles, from spaghetti dishes to pasta primavera and beyond).
